Entirely renovated under the leadership of designer Tristan Auer, the restaurant pays tribute to femininity and nature, by offering a sensory journey where refinement, softness and design interact subtly, in resonance with the culinary universe of Anne-Sophie Pic.

A restaurant designed like a landscape

The restaurant opens the horizon to light and the sublime view of the Beau-Rivage Palace. The play of mirrors invites the eye and tames the light throughout the day. Tristan Auer has chosen authentic, raw materials: wood, leather, quartzite, stone... We nestle in the curved armchairs for a journey of the senses. The Chef invites art into this new setting: watercolor by Swiss painter Michael Rampa, leather by Helen Amy Murray or sculpted wax by Mona Oren. Tableware, unique pieces by Léa Kreling and Cornelia Hofstetter, Swiss ceramic artists, accompany the new rituals on the menu.

At the alpine peaks

The universe of Anne-Sophie Pic at the Beau-Rivage Palace in Lausanne embodies fifteen years of culinary travel in Swiss lands. Switzerland, a source of inspiration and memories of childhood, nourishes her creativity and extends the intimate link she maintains with the Vaud terroirs dear to her heart. She then imagines dishes such as La Féra du Lac Léman, matured and supported by a vegetable sauce that reveals the delicate scents of fig leaves and spruce, while her emblematic ASP© Berlingots combine maize, sheep cheese, sheep cheese, lavender from Drôme and saffron from Jorat. For dessert, she imagines a new interpretation of Millefeuille blanc from our meadows where the creaminess of the Gruyère double crème infused with sweet clover and Vaud beer à la Reine des Près highlights the delicacy of this regressive creation.

A multi-faceted sommelier

To accompany her creations, Anne-Sophie Pic has imagined, in collaboration with Paz Levinson, Head Sommelier of the Pic Group, agreements with and without alcohol. These agreements are the promise of new aromatic dialogues. The wine selection highlights exceptional bottles ranging from the Rhône Valley, the chef's region, to Switzerland, with maceration wines with intense aromas in particular. Innovative creative drinks complete the experience.

A talented team

From her various meetings with Swiss producers and artisans, Anne-Sophie Pic has confided all the secrets to her Chef Jordan Theurillat, who has been faithful to her for more than ten years, including five years spent in Lausanne. In the room, Nicolas Kempinski, room director, ensures the excellence of the welcome and service. Dominique Peretti, also from Maison Pic, is in charge of pairings and the magnificent wine list. With Chef Jordan Theurillat, the Chef imagines a cuisine in tribute to the Swiss region that she has always loved. Pastry, for its part, is revealed through the daring creations of the pastry chef Baptiste Tisserand.

Practical information

• The restaurant is open from Tuesday to Saturday, from noon to 13:30 for lunch and from 18:30 to 21:30 for dinner.
• Closed on Sundays and Mondays.
• From April 19, 2026, opening on Sunday noon and closing on Tuesday.
• Enjoy our terrace and garden when the weather is nice.
• Valet parking is available free of charge to our guests.
• Pets are not allowed in the restaurant.
• Proper clothing is required.
