New menu at André

André's menu pays tribute to vintage cuisine that draws on the emotional and gastronomic heritage of the Pic family. Designed by Anne-Sophie Pic, the menu comes to life through iconic dishes by Jacques Pic and André Pic, which are, for some, a reflection of childhood taste memories. Through its selection, this card brings back to life a vocabulary, shapes and know-how that marked an entire era: the checkerboard, the minute, the timbale, the medallion, the medallion, the vol-au-vent or fantasy. These are all distinctive signs of a precious culinary heritage that is both popular and refined.

At André, I wanted to pay tribute to a cuisine based on memory and sharing, to dishes that we would like to perpetuate over time, dishes told and transmitted by my father Jacques Pic and my grandfather André Pic, as the embodiment of an era. By putting them in the spotlight, these dishes carry a living culinary heritage and reveal a cuisine that is sincere, sensitive and deeply generous. Anne-Sophie Pic.
